2 c Sugar
2/3 c Hershey's Cocoa
1/4 c All-purpose flour
1/4 ts Salt
2 c Milk
2 Eggs, slightly beaten
1 tb Vanilla extract
1 qt Light cream
1/2 pt Whipping cream

In medium saucepan, combine sugar, cocoa, flour and salt; stir in milk and eggs. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat. Stir in vanilla, light cream and whipping cream. Refrigerate until cold. Freeze in ice cream freezer according to manufacturer's directions. About 2-1/2 quarts ice cream. Hot, Hot Cheese Ball Recipe'''''''' Yield: 1 Ball

4 oz Softened Cream Cheese
2 c Grated Chedder Cheese
1 tb Grated Onion
1 tb Milk
1 tb Worcestershire Sauce
2 tb Minced Seeded Jalapeno Pepper
2 tb Minced Seeded Red Bell Pepper
2 tb Minced Pepperoni
1 tb Chili Powder

Allow cheeses to warm to room temperature. Mix cheeses, milk, onion, and Worcestershire sauce with electric mixer. Add peppers and pepperoni and gently mix. Rap mixture in plastic rap and refrigerate until firm. While still in plastic rap, form in to ball shape, unrap and roll in chili powder. Serve with your favorite crackers.

1 clove garlic, minced
2 ribs celery, diced
1 small white onion, diced
1 carrot, diced
1/4 cup flour
1 and 1/2 cups chicken broth
1/3 cup dry white wine, optional
1/3 cup fresh parsley, chopped
1 tsp. dried thyme
1 tsp. dried oregano
1/2 cup Half and Half or light cream
2 - 3 cups cooked turkey, cubed
Salt and pepper to taste
1 package frozen puff pastry sheets, thawed
1 egg

Melt butter in a saucepan and saute garlic, celery, onion and carrot until tender. Add flour and stir. Add chicken broth, wine, parsley, thyme and oregano and cook for 2-3 minutes.
Add Half and Half and turkey stir until mixture is creamy. Add desired amount of salt and pepper and pour mixture into a baking dish. Cover with pastry sheets. Beat egg and brush over pastry sheets. Bake at 400 degrees for 30 minutes. If you want to save some time you may substitute a package of frozen mixed vegetables instead of the carrots, onion, and celery.

1 tsp. ground cinnamon
2 Tbsp. flour
4 cups tart cherries, pitted
1 Tbsp. butter, melted
1 double 9-inch pie crust

Combine cherries, sugar, cinnamon, and flour in a bowl and toss well. Pour cherries in the bottom half of the piecrust and top with butter. Place the top portion of the piecrust on the cherries and make several vents in the top with a sharp knife. You may also sprinkle a small amount of sugar on the top crust if desired. Bake at 350 degrees for 40 minutes. Serve warm with vanilla ice cream.

Spicy Pork Stew'''''''''' 8 dried red chiles
2 Tbsp. vegetable oil
2 - 3 pounds pork loin cut into 1-inch pieces
1 large onion, chopped
2 cloves garlic, minced
4 cups beef broth
2 red potatoes, diced
2 tomatoes, diced
2 Tbsp. brown sugar
1 tsp. cinnamon
1/2 tsp. ground cloves
2 Tbsp. apple cider vinegar

Place chiles in warm water for 10 - 15 minutes. Meanwhile, heat oil in a large skillet and brown pork with onion and garlic. After chilies have been sitting in the water until softened, remove tips and seeds. Chop the chilies. Place beef broth in a blender and add red chilies. Puree broth and chilies in the blender. Place beef broth in a crock-pot followed by browned pork, onions and garlic. Add potatoes, tomatoes, brown sugar, cinnamon, cloves and vinegar. Cook for several hours until potatoes are tender. This stew is somewhat spicy. If you do not like your food hot, reduce the number of red chiles that you use in the stew. We would recommend that you use some chilies in the stew because they add a great flavor.

Chocolate Kahlua Pie***
1 9-inch unbaked pie shell
2 eggs
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup butter, melted
2 Tbsp. flour
1 tsp. vanilla
1/2 cup semi-sweet chocolate chips
1/4 cup dark corn syrup
1/3 cup Kahlua or other coffee flavored liqueur

Combine eggs, sugars, butter, flour, vanilla, chocolate chips, corn syrup and Kahlua and mix well. Pour into pie shell and bake for 30 - 40 minutes at 350 degrees until center is firm. Allow to cool and serve.
