Foolproof Dark Chocolate Fudge Recipe'''''
3 (6 ounce) pkg. semi-sweet -chocolate chips (3 cups)
1 (14-ounce) can Sweetened condensed milk
1 ds Salt
1/2 To 1 cup chopped nuts
1 1/2 ts Vanilla extract
In heavy saucepan, over low heat, melt chips with condensed milk, and salt. Remove from heat; stir in nuts and vanilla. Spread evenly into a wax paper lined 8 or 9" square pan. Chill 2 hours or until firm. Turn fudge onto cutting board and cut into squares.

MICROWAVE instructions: In 1 quart glass measure, combine chips with condensed milk and salt. Cook on 100% power (high) 3 minutes or until chips melt, stirring after each 1 1/2 minutes. Stir in remaining ingredients. Proceed as above.

Old Fashioned Strawberry Ice Cream Recipe''' 1 pt Strawberries
1 c Sugar
1 Egg
1 c Half and half
1 t Vanilla
3 c Heavy cream

Hull the berries and cut the larger ones in half. Place the berries in a double boiler and add 1/2 cup sugar. Heat for 10-15 minutes, stirring occasionally, until the fruit is very soft. Puree the fruit in a blender. Transfer puree to a bowl and cool in the refrigerator.

Put the egg, half and half, remaining sugar and vanilla extract in the blender and blend on medium speed till mixture is smooth and the sugar is dissolved. Slowly add the cream and continue blending on low speed for 30 seconds. Transfer the mixture to your ice cream freezer and freeze according to manufacturer's instructions.

When the ice cream is about half frozen, add the strawberry puree to the mixture. Continue freezing. Makes slightly more than 1 quart.

Honey Nut White Fudge Recipe'''''' 2 tb Butter or margarine
2/3 c Undiluted Evaporated Milk
1 1/2 c Granulated sugar
2 c (4 ounces) miniature Marshmallows
2 c (12-ounce package) NESTLE TOLL HOUSE Premier White Morsels
1 1/2 c honey roasted Peanuts, divided
2 ts Vanilla extract


Combine butter, evaporated mink and sugar in medium, heavy saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil for 4 1/2 to 5 minutes, stirring constantly. Remove from heat.

STIR in marshmallows, morsels, 1 cup peanuts and vanilla. Stir vigorously for 1 minute or until marshmallows are melted. Pour into foil-lined 9-inch square baking pan.

Coarsely chop remaining peanuts; sprinkle over fudge and press in. Chill until firm. Remove foil before cutting into squares.

Easy Pie Crust Recipe'''''''''         1 1/3 cups plain flour
1 cup shortening
1 tsp. salt
3 Tbsp. cold milk
2 12" squares of wax paper

Combine the flour, oil and milk in a bowl. Pat the dough into a ball. Sprinkle
flour on the waxed paper and place the ball of dough between the two sheets.
Roll out to edge and trim. Place the rolled dough into pie tins.

MMMM LEMON PIE
Lemon Pie'''''''
1 baked pie shell
1 1/4 cups sugar
6 Tbsp. cornstarch
2 cups water
1/3 cup lemon juice
3 eggs separated
3 Tbsp. butter
1 1/2 tsp. lemon extract
2 tsp. vinegar

Mix the sugar and cornstarch together in top of double boiler. Add the 2 cups
of water. Combine the egg yolks with the lemon juice and beat. Add to the rest
of the mixture. Cook until thick over boiling water for about 25 minutes. Now
add the lemon extract, butter and vineger and stir thoroughly. Pour into a 9"
pie shell and let cool. Cover with meringue and brown.

MMM CHOCOLATE CAKE
Homemade Chocolate Cake''''''' 2 cups flour
1 1/2 tsp. baking powder
1/4 tsp. salt
3/4 cup butter
2 cups sugar
1 tsp. vanilla
4 eggs
1 1/2 cups milk
6 oz. unsweetened chocolate
1 1/2 cups chocolate chips

Melt the unsweetened chocolate. Sift the flour, baking powder, and
salt together. Cream the sugar and butter together until fluffy.
Add the eggs, one at a time, and beat well after each addition. Add
the dry mixture and the milk and mix well. Fold in the chocolate chips.
Pour batter into a lightly-greased 9" X 13" pan and bake in a preheated
oven at 350°F for 40-45 minutes. Frost when cool.

WOW  SPICE CAKE
Homemade Spice Cake'''''''''''' 3/4 cup butter or shortening
1 cup brown sugar
1 egg
1/2 cup raisins
1/4 tsp. salt
1/4 tsp. cloves
1/4 tsp. nutmeg
1/4 tsp. allspice
1/4 tsp. cinnamon
2 cups flour
1 tsp. baking soda
1 cup sour milk
2 tsp. baking powder

Cream together butter, brown sugar and egg until light and fluffy. Stir
in raisins, salt and spices. Add half the flour. Blend in baking soda
and milk. Stir in remaining flour and baking powder. Pour batter into
buttered 8-inch round layer pans or 7" x 12" baking dish. Bake in a
preheated oven at 375°F for 25 minutes or until top springs back
when touched.
